Beef & pea hand pies recipe

INGREDIENTS

  • 2 tsp olive oil
  • 1 small onion, finely chopped 1 garlic clove, minced
  • 500 grams minced ground beef
  • 2 tbsp tomato paste
  • 2/3 cup bottled passata
  • 1/2 cup frozen peas
  • 1/3 cup finely chopped fresh parsley
  • 2 x 400 g puff pastry rolls
  • 1 egg, lightly beaten
  • 1 cup tomato sauce

METHOD

PREHEAT oven to 200°C. Lightly oil two oven trays.

HEAT oil in a large pan over medium- high heat, cook onion and garlic for 3 minutes.

INCREASE heat to high, add beef, cook, stirring until heated through. Add tomato paste, passata and peas. Remove from heat, season and stir in parsley.

CUT each pastry sheet into quarters (you need 12 squares for hand pies).

SPOON 1⁄4 cup of beef mixture into the centre of each square. Brush edges  of hand pies  with egg, fold pastry in half diagonally to enclose filling, pinch the edges to seal. Place hand pies on trays, brush with egg.

BAKE hand pies for 15 minutes until golden brown. Serve with tomato sauce.

TIP: Cooked pies can be frozen for up to 3 months in an airtight container.
