ALMOND CANTUCCINI

INGREDIENTS

  • 170ml white granular sugar
  • 2 eggs
  • 80ml vegetable oil
  • 2 drops anise oil
  • 550ml flour
  • 2tsp baking powder

METHOD

  1. In a medium bowl, beat together the sugar, eggs, oil and anise oil until well blended. In a separate bowl, mix the flour and baking powder. Stir into the sugar and oil mixture, until it forms a heavy dough.
    2. Make 2 small loaves of about 3-4 cm wide and place them on the pizza oven cooking floor at 180°, close the door and cook for 30 min.
    3. Take the loaves out and cut them in slices 1 cm large. Wait until the oven cool down a little and baked the sliced cookies for another 10 min. Take them out and leave to cool. Serve with coffee, tea or straw wine.

Makes around 30 biscuits.
