Fabulous flavours for easy alfresco entertaining


  • 30ml red wine vinegar
  • 10ml caster sugar
  • 3ml chopped fresh thyme
  • 2 red onions, peeled and thinly sliced
  • ¼ watermelon
  • 200g cherry tomatoes
  • 3 radishes, thinly sliced
  • 15ml roughly torn fresh mint
  • zest and juice of 1 lime
  • salt and milled black pepper
  • 100g Parma ham
  • 100g feta cheese, cubed


1. Place the vinegar, caster sugar and thyme in a small non-metallic bowl and stir until the sugar dissolves. Add the onion slices and toss to coat. Set aside for 20 minutes.
2. Cut the watermelon into small cubes or use a melon baller to shape it into balls.
3. Place the watermelon in a salad bowl with the cherry tomatoes, radishes, mint, lime zest and juice. Season with salt and pepper.
4. Add the reserved onion
slices and vinegar mixture
and toss together.
5. Arrange the salad on a platter and top with swirls of Parma ham and feta cheese.
