This vegetarian smoothie from Mila’s Meals: The Beginning & the Basics, published and written by Catherine Barnhoorn, R480, is a great source of vitamins C and K, fibre, potassium, omega-3 fatty acids and more
- 1 cup mixed berries, fresh or frozen (such as strawberries, blueberries, raspberries)
- 1 cup baby leaf spinach (or 1t green powder)
- ½ an avocado, peeled
- 1 cup water, or coconut milk (be sure to find one without preservatives)
- 2 dates, soaked
- 1t honey, or maple syrup
1. Place all the ingredients in a blender and blend until smooth.
Alternatively freeze the smoothie and serve as an ice lolly.
