Simple yet satisfying, this instant pap porridge can be made in a flash on those rushed weekday mornings.

Instant pap with lemon, butter & sugar

HANDS-ON TIME 10 min | TOTAL TIME 25 min | SERVES 4-6


  • 1 cup instant mielie papp
  • 1.25 L water
  • 1 tsp salt
  • 1 1/2 cups milk
  • 2 tbsp butter
  • 1/4 cup light brown sugar
  • 2 lemons, cut into wedges


MIX the instant pap with 1 cup of water

BRING the remaining water and salt to a boil in a large pot. Stir in the mielie pap mixture.

COOK the pop, covered over low heat without stirring for 10 minutes.

ADD 1 cup milk and butter and stir gently, being careful not to scrape the layer of pap stuck to the bottom of the pot.

LADLE pap into bowls, sprinkle with sugar and a generous squeeze of lemon juice.


Tip from the team: Mixing the mielie pap with water to make a paste is essential – it helps prevent lumps from forming once it hits the water.
