Summer’s not over just yet, and entertaining in the heat always requires an ice cold drink in hand. Why not make that drink a homemade iced tea? This recipe is just as delicious as it is refreshing.

Preparation: 30 minutes

Refrigeration: 2 hours

Ingredients:

  • 5 Freshpak Rooibos tea bags
  • 1 litre boiling water
  • 2 tablespoons freshly squeezed lime juice/lime cordial
  • 1/4 cup berries (eg. cherries, strawberries or mixed berries)
  • 1-2 tablespoons vanilla essence
  • 80-100ml honey
  • Ice (as needed)

Method:

  • Place the tea bags in a jug, add boiling water and allow to steep for 5 minutes (or longer if you prefer a stronger iced tea)
  • Remove the tea bags, add lime juice, honey and vanilla essence and stir
  • Let the tea cool to room temperature and refrigerate until chilled
  • Serve with lots of ice and garnish with mint and berries
