Pickled fish sosaties

A South African delicacy. Easy to make with the right ingredients, your family will truly appreciate this meal. So to keep everyone full and happy try this Easter recipe.

Ingredients

  • 600 g kingklip fillet fish
  • 2 onions, peeled and quartered
  • 200 g Padron peppers
  • 2 T olive oil
  • 1 T fish sauce
  • 1 t brown or palm sugar
  • masala spice blend
  • 2 sprigs curry leaves

Instructions

  1. Toss the fish, onions and peppers in the marinated oil, cover and chill for 1 hour.
  2. Thread the fish onto metal kebab skewers.
  3. Heat a pan until hot. Oil the pan and cook the sosaties for 5 minutes on each side.
  4. Mix the sauces and sugar and serve with the sosaties

You can use salmon or hake instead of kingklip if you like.

Fish pie

One can never go wrong with pie on easter. A quick lunch snack before the big Easter dinner meal.

Ingredients

  • 300 g hake fillets
  • 1 T seafood rub
  • 4 T extra virgin olive oil
  • 250 g mashed potatoes
  • 4 free-range eggs
  • 15 g parsley, roughly chopped
  • 150 g butter, softened
  • 1 small onion, finely chopped
  • 150 g Cheddar, grated

Instructions

  1. Preheat the oven to 200°C.
  2. Place the hake fillets on a plate and season with the seafood rub.
  3. Heat the oil in a pan and fry the fish for about 5 minutes on each side, until golden brown and flaky.
  4. Flake the fish into a bowl with the mashed potatoes.
  5. Make three wells in the pie and crack the remaining eggs into them.
  6. Cover with tin foil, making sure and bake for 15 minutes, or until the top is crispy.
  7. Serve warm with crusty bread and butter.

Coconut cereal snowballs

After a full amazing dinner, why not finish it up with an equally amazing dessert everyone will love? This quick dessert will surely leave everyone wanting more.

Ingredients

  • 75 g cornflakes
  • 200 g desiccated coconut
  • 125 g butter, softened
  • 120 g icing sugar
  • ½ cup milk
  • 6 T cocoa

Instructions

  1. Crush the cornflakes using a Nutribullet or food processor. Pour into a bowl with the remaining ingredients, reserving 50 g coconut.
  2. Mix well, using your hands to combine
  3. Roll the mixture into balls about 12 cm in diameter. Roll in the remaining coconut.
  4. Chill, covered, until ready to serve.
