Beetroot and ginger slushy
Enjoy this thirst-quenching Beetroot & ginger slushy while you soak up the sun!
PREP TIME 5 min | MAKES 2 cups | VEGETARIAN
- 1 beetroot (200 g), peeled, cut into wedges
- 2 carrots (240 g), unpeeled, chopped coarsely
- 2 red-skinned apples (300 g), unpeeled, chopped coarsely
- 2 cm piece fresh ginger (10 g), peeled, grated finely
PUSH beetroot, carrot and apple through a juice extractor into a jug and stir in the ginger.
TOP with crushed ice and serve immediately.
