These apple crumble muffins are easy to whip up and are a fun, delicious way to get your kids involved in the kitchen.

PREP TIME 15 minutes | TOTAL TIME 35 minutes, plus cooling | MAKES 12

INGREDIENTS

  • 2¼ cups self-raising flour
  • ⅔ cup brown sugar
  • 100 g butter, melted
  • 1 cup buttermilk
  • 2 eggs, lightly beaten
  • 2 green apples, finely chopped

CRUNCHY TOPPING

  • 20 g butter
  • ¼ cup chopped walnuts
  • 1 tsp cinnamon
  • 2 tbsp brown sugar
  • 2 tbsp flour

METHOD

PREHEAT the oven to 180°C. Grease a 12-hole muffin pan.

SIFT flour and sugar into a large bowl. Whisk butter, buttermilk and egg in a jug; stir into dry ingredients. The mixture should be lumpy – do not over-mix. Gently stir in apple.

SPOON mixture into pan holes. Top muffins with crunchy topping.

BAKE for 20 minutes. Leave in pan for 10 minutes before turning, top-side up, onto a wire rack to cool.

CRUNCHY TOPPING

MELT butter in a small pot. Add in the remaining ingredients to form a crumbly mixture.

 

TIP: To make jumbo muffins use a 6-hole 180ml muffin pan; you will need to bake them for 35 minutes.
