Former Miss South Africa Sandy de Bruin delights in creating a magical setting in which to serve a memorable festive lunch
- 500g ready-made puff pastry, defrosted
- 400g jar mincemeat
- 1 orange, zest and juice
- 1 egg white, beaten
- icing sugar, to serve
1. Preheat the oven to 220°C. Use a pastry cutter to cut 12 circles from the puff pastry. Butter a 12-cup muffin pan and place a pastry round into the bottom of each cup to form a base.
2. Combine the mincemeat, orange zest and juice together. Place a spoonful of the mincemeat mixture onto each base. Brush the edges of the pastry with the egg white and place another round of pastry on top to enclose and seal in the filling.
3. Brush the tops with egg white and bake for 15–20 minutes until risen and golden brown. Allow to cool and dust with icing sugar before serving.
This recipe makes 12 mince pies.
