Almond harvesting in South Africa runs from March to May, depending on the tree variety. Harvesting almonds comes in 3 stages:

Stage 1:

During the first stage, the almond hulls are completely closed. When the hulls are closed, your almonds are not ripe or ready to harvest. When harvested at this stage, the nuts will be green and sour. The best you can do is leave them on the trees for a longer time.

Stage 2:

At this stage, the almonds are almost ready to be harvested. You can see the hulls of the almonds starting to split open. The hulls will split open but will remain attached to the shell, indicating they aren’t ripe yet. When the split happens, you will see the almond’s wood-like shell. This is the time when, inside the shell, the almond nut will start to slowly dry as it is now exposed to the sun and wind. If you pick the nuts at this stage, you will have trouble removing the complete hulls. This is because the nut is still stuck to the shell.

Stage 3:

The nut is ready to harvest! This is the right time to harvest, your almonds are ripe and ready. Pick them pretty soon, as they will start to fall from the tree. The hulls are fully opened, and the colour changes from green to a yellowish hue. During harvest time, it’s essential to pick the nuts immediately. Acting quickly is crucial because the nuts can attract birds and squirrels. Make sure to protect your harvest, as you risk losing a portion of it if you don’t.

The harvest

Harvesting almonds is relatively straightforward, but the method you use can depend on the size of your almond tree. You can either pick the nuts manually or shake the branches to let the nuts fall to the ground. However, allowing the almonds to fall naturally can be problematic, as birds may begin to peck at them, resulting in a loss of some of your harvest.

As soon as you harvest your almonds, remove the hull from the shells. It is easy to peel off with your hands if you harvest at the right time. Place your almond shells in a drying tray and allow them to dry completely.
