APPLE GALETTE WITH CINNAMON CREAM

INGREDIENTS

For the apple galette:

  • 1 sheet of prepared puff pastry, defrosted
  • 200g soft goat’s milk cheese or ricotta cheese, crumbled
  • ¾ cup sugar
  • 2 eggs
  • ½ cup thick cream
  • 1t vanilla paste or vanilla extract
  • 3–4 fresh apples, cored and thinly sliced

For the cinnamon cream:

  • ½ cup thick cream
  • ½ cup cream cheese
  • 2T icing sugar
  • 1t ground cinnamon

To serve:

  • 1T icing sugar
  • violets (optional)

METHOD

1. Preheat the oven to 190°C. Open the sheet of puff pastry and place onto a baking tray lined with baking paper.
2. Whisk the cheese, sugar, eggs, cream and vanilla paste or extract together until smooth and creamy. Spread the cheese mixture evenly over the puff pastry.
3. Arrange the apples slices in a circle on top. Bake the galette for 30 minutes at 190°C. Remove from the oven and leave to cool slightly.
4. To make the cinnamon cream: mix the cream, cheese, icing sugar and cinnamon together with a whisk until smooth and creamy.
5. Dust the galette with icing sugar and serve topped with dollops of cinnamon cream and garnished with violets.
