If you’re after something bold, fast, and actually satisfying, this stir-fried pork with peanut and chilli delivers on all fronts. Tender strips of pork are tossed with crunchy veg, smoky chilli, and a savoury soy glaze, then finished with salty peanuts for that perfect bite.

Ingredients

  • 500 g pork stir-fry strips
  • Salt and freshly ground pepper
  • Vegetable oil for stir-frying
  • 10 ml Sesame oil
  • 3 Garlic cloves, finely chopped
  • 10 ml Smoked chilli flakes
  • 1 Bunch spring onions, cut into 4 cm lengths
  • 2 Red peppers, cut into strips
  • 125 g Sugar snap peas
  • 3 Carrots, cut into batons
  • 1 Red onion, thinly sliced
  • 1 Baby cabbage, thickly sliced
  • 125 ml Salted giant peanuts, roughly chopped
  • 80 ml Soy sauce
  • 500 g Ready-cooked egg noodles

Instructions

  1. Season the pork with salt and pepper and toss to mix.
  2. Heat a little vegetable oil in a wok until smoking hot and toss the pork with half the sesame oil, garlic, ginger and chilli.
  3. Stir-fry vigorously for a few minutes until the meat is almost done. Remove and set aside.
  4. Add a little more vegetable oil to the wok.
  5. Add the vegetables and remaining sesame oil, garlic, ginger and chilli and stir-fry until almost done.
  6. Return the meat to the wok, add the peanuts, soy sauce and noodles, and stir-fry for another minute.
  7. Serve immediately.

Notes

Pork neck steaks are also excellent for stir-fries. Replace the peanuts with cashew nuts if you like.
