Jane Griffiths, author of Jane’s Delicious Urban Gardening (Sunbird Publishers) makes a spice rub for both meat and vegetables
- 1T mild chilli powder
- 2T ground filter coffee
- 2T brown sugar
- 1T ground coriander seeds
- 2t dried oregano
- 2t dried thyme
- 1½t sea salt
- 1½t coarsely ground black pepper
- Mix all the ingredients together.
- Brush meat or vegetables lightly with olive oil and sprinkle liberally with the rub before braaing. Store in an airtight container.
