Jane Griffiths, author of Jane’s Delicious Urban Gardening (Sunbird Publishers) makes a spice rub for both meat and vegetables


  • 1T mild chilli powder
  • 2T ground filter coffee
  • 2T brown sugar
  • 1T ground coriander seeds
  • 2t dried oregano
  • 2t dried thyme
  • 1½t sea salt
  • 1½t coarsely ground black pepper


  1.  Mix all the ingredients together.
  2. Brush meat or vegetables lightly with olive oil and sprinkle liberally with the rub before braaing. Store in an airtight container.
