The container drawer or cupboard in most homes is a mixed collection of materials accumulated over years: plastic of various ages and qualities, glass jars, stainless steel lunch boxes, ceramic dishes with lids and the occasional silicone bag. Not all of them are appropriate for all uses, and the mismatch between container material and contents is where food safety, flavour quality and container longevity all suffer.
Glass: the most versatile option
Glass containers are the most broadly suitable choice for food storage. Glass is non-reactive, which means it does not interact chemically with acidic foods, oils or strong flavours, and it does not absorb odours or staining over time. Tomato sauce in a glass jar stored in the fridge for a week remains the same quality as it was when it went in; in a plastic container, the same sauce can absorb into and stain the plastic while the plastic’s compounds migrate into the acidic food. Glass is safe for the microwave, for the oven where appropriate, and for the freezer if care is taken not to fill it to the rim before freezing, since liquid expands and can crack the container.
The one limitation of glass is weight and fragility. For packed lunches, school boxes and portable storage, it requires more care than plastic or stainless steel.
Airtight plastic: fine for dry goods and cold, non-acidic food
BPA-free airtight plastic containers work well for dry goods such as grains, pasta, flour, sugar and cereal, where neither acidity nor heat is a factor. They are appropriate for sandwiches, cut fruit and similar cold, non-acidic refrigerator content where the storage period is short, typically a few days. Avoid storing oils, tomato-based sauces, citrus preparations or alcohol in plastic containers, since each of these accelerates the migration of plasticiser compounds from the plastic into the food. Old, scratched plastic is more problematic than new containers, since the increased surface area of scratches provides more opportunity for chemical interaction.
Stainless steel: reliable but not universal
Stainless steel containers are durable, long-lasting and an excellent choice for bulk dry food storage, packed lunches and food transport. They are not suitable for the microwave, for the freezer in most cases, or for highly acidic or salty foods over extended periods, since both acidity and salt can cause pitting and surface corrosion over time. They do not absorb odours and clean easily.
Silicone: excellent for freezer and microwave
Silicone food bags and containers are heat-stable and cold-stable, which makes them one of the better choices for both freezer storage and microwave use. They are flexible enough to fold and store compactly and do not react with food the way plastics can. They do require more thorough cleaning than rigid containers, particularly in the corners and seal areas where food residue collects.
What you should never store in any container
Hot food should not be sealed into an airtight container immediately after cooking. The steam produced inside a sealed container creates condensation and significantly increases the risk of bacterial growth. Allow food to cool to room temperature before sealing and refrigerating. This applies to all container types.
Raw meat should be stored in a container on the bottom shelf of the refrigerator, sealed and placed on a plate or tray to catch any drips. Never store raw meat in a container that will also be used for ready-to-eat food without thorough washing in between, and never store raw meat in the same container as cooked food or fresh produce.
Strongly scented foods, garlic, onion, strong cheeses, fermented foods, stored in plastic containers will transfer their smell and flavour to the plastic and potentially to subsequent contents. Glass or stainless steel handles these foods considerably better.
The one habit that protects everything
Washing storage containers after every single use, regardless of whether the contents looked clean, is the practice that maintains both food safety and container quality over time. Residual fats, acids and proteins left in a container between uses degrade the material gradually and allow bacteria to build up in seams and on surfaces. A container that smells slightly of yesterday’s contents has not been properly cleaned, and whatever goes in next will be in worse conditions than it deserves.
