BERRIES AND FRUIT WITH BUTTERSCOTCH SAUCE

This easy, summer recipe is ideal when you’re having friends over. The fresh fruit is light and refreshing while the butterscotch sauce adds a sweet and sticky taste

INGREDIENTS

  • 60g butter
  • 75ml brown sugar
  • 125ml golden syrup
  • 175ml double cream
  • 5ml vanilla extract

TO SERVE:

fresh strawberries, cherries, pomegranate seeds and berries of your choice

METHOD

  1. To make the butterscotch sauce: melt the butter, sugar and golden syrup together in a saucepan on top of the stove until the sugar is dissolved, about 5 minutes.
  2. Slowly add the cream and vanilla extract while stirring continuously until well combined.
  3. Remove from the heat and cool.
  4. Pour into little ramekins and serve with a selection of fresh fruit and berries.
